#57: Corn Muffins!

I rarely have time to bake, but I couldn't ignore the sudden urge to do so today. I found a box of Trader Joe's Jalapeno Blue Corn Cornbread Mix, and got inspired. I prepared the mix and added in some green onions (never can have enough of that!) and more canned corn kernels.

I love muffins way more than bread because I'm a huge crusty crust fan. Muffins just have a better crusty surface to moist innards ratio than you can get with a loaf of bread... especially mini muffins. They're virtually all crusty goodness!

So, I popped in a dozen mini muffins and a dozen regular sized muffins, and eagerly watched my little babies grow into fruition. Whoever invented the oven window and the oven light owes a big hug and a thank you from me, as I find watching the baking real-time to be the best part of the whole process!

After 15-20 minutes, the little muffins were done... Voila!


Ten minutes later, the big mamas were ready...


And... INNARDS!


I have 100% complete trust in Trader Joe's choices on what they put on their shelves, and these did not disappoint! Perfect moistness, just the right amount of jalapeno spice, and great consistency... yumm-o! My additions of canned corn and green onion gave it more texture and an asian-y taste to it. Delectably delicious!
